As a few of the regulars to this blog may know Mrs CR runs a tapas blog. We love the Andalucian food and the whole culture that surrounds it. The good thing about Andalucian recipes is their simplicity and diversity - no rules, just adapt and experiment with the recipe and if its tasty thats good enough!
Every week we try to do something different, below we have 5 stages of a very simple pork crackling - Andalucian style... Who says it just has be oil and salt to flavour? Smoked paprika "picante" makes a great difference as do a mixture of herbs...Tasty
